1 pound dried black-eyed peas
Hambone or ham hock (such as the bone left over from a Christmas ham)
Salt and pepper
Garlic powder
2 onions, finely diced
2 cans (about 14.5 ounces each) diced tomatoes

Rinse peas in cold water. Place in a cooking pot with about 10 cups cold water. Soak overnight.

Drain off soaking water. Add about 5 cups water, to generously cover the peas. Add the hambone (use a bone with plenty of meat left on it). Sprinkle with salt and pepper. Add 1 teaspoon garlic powder and the diced onion and tomatoes.

Bring to boiling over medium-high heat, reduce heat cover and simmer on low heat for three hours or until the peas are tender.

Remove the hambone. Scrape off and reserve any of the meat still clinging to the bone. Return the meat to the soup pot and serve.

I used this recipe this year and it turned out really good!
